Berry Bellini

Tips to fancy up your fizz: try a sugar rimmed glass  topped with ZARI Sparkling White bubbly and decorated with pomegranate arils. You can also freeze fruit pulp to use as ice cubes in your Bellini -  power to your health! 

Celebrate that special event with an elegant berry mocktail. The perfect balance of sweet and sharp. 

  • 300g frozen mixed berries
  • ¼ cup (60ml) fresh lemon juice
  • 3 cups (750ml) ZARI Bubbly White
  • fresh raspberries, to serve
  • pomegranate rubies, to serve

1.) Place the frozen berries and lemon juice in a small saucepan. Stir over a low heat, gently mashing the berries as you stir to form a sauce. Allow the sauce to simmer for 7-8 minutes, stirring regularly or until thickened.

2.) Strain the berry sauce through a sieve. Discard the pulp and set the sauce aside to cool.

3.) Place 3 teaspoons of berry sauce in each champagne flute and top up with ZARI Bubbly White. Stir very gently. Pop a few raspberries and pomegranate rubies in each glass before serving.

Servings: 4 

Pairs well with strawberry ice cream, mango marinaded chicken wings and tangy cheese puffs.
